Have you ever tried fried chicken on the side of Pratunam road? Some are grilled and some are fried. Both are different but there is one thing in common, they use Thai chili sauce.
Thai chili sauce has a special meaning for me. It was the first food I liked since 2015, almost 10 years. At that time, I was very hungry at night and had to eat, after shopping all day in Pratunam to buy some orders. Remember that was the first time I made money from selling fashion clothes from Pratunam which were very cheap with very good quality at that time.
So, I thought about making Thai chili sauce, because I was very confused about matching what chili sauce was suitable for the grilled chicken that I made to fulfill today's protein.
Pan Roasted Chicken Recipe with Thai Sauce:

1 kg of filleted chicken thighs

Pinch of salt, pepper, coriander

1 tsp sweet soy sauce
The chicken I got was then boiled a little, only about 5 minutes to remove the aroma of the chicken. Then after that it was washed with water and given salt, pepper, coriander and sweet soy sauce on the entire surface of the chicken. It can be marinated for 30 minutes in the refrigerator.
Roast the chicken on the pan until perfectly cooked and set aside.
After that, I made a simple Thai sauce with the following ingredients:

4 pcs cilantro

5 pcs super spicy red chilies
-
2 cloves of shallots and garlic

1 tsp sugar
-
50 ml water
-
Pinch of salt
Making Thai sauce is very simple. You only mix sugar and water then cook over low heat until the water reduces slightly.
After that, slice the onion, cilantro, chilies and add a little salt. Pour the sugar water into a bowl that already contains the chili pieces. Serve.
Well, both are done and ready to be served as lunch today. I made it with love even though it is very simple.
