Today is recipe day, as I'm sharing my entry for the weekly contest brought to us by the @Qurator team, Qurator's: Hive Top Chef! | Oats, for this week, the main ingredient to work with had to be oats, I love oats, I grew up with my grandmother, and it was very common, that in the afternoons or in the mornings she would prepare hot oatmeal, like an atol, she made us cookies, cakes, so oats, of course, are part of the main foods in my house, I almost always prepare pancakes for my daughter Micaela, with oat flour and oat flakes, they are healthier, and she loves them, for my entry, I wanted to prepare some oatmeal arepas with paprika, you do not know how delicious these arepas are, I accompanied them with scrambled eggs (in Venezuela we call it perico, and avocado) this was my super breakfast today. I'm sharing the step-by-step instructions.
Delicious Oatmeal and paprika arepas.
Ingredients:

1/2 cup corn flour.

1/2 cup and 1 tablespoon rolled oats.

Half a red bell pepper.

1 cup water.

1/2 teaspoon salt.
Preparation:
1- First, in a bowl, add the flour, oats, and salt, mix, then add the water. Add the water and mix, either with your hands or with a spoon. You should have a consistent dough. If it's too hard, add a little more water.
2- Once the dough is ready, grate the paprika using the coarse side of a grater and continue kneading to combine everything well. You should have a firm, compact dough.
3- Now we're going to form our arepas. Before making them, you can check the flavor, see if the salt is right or if it needs a little bit of salt. If everything is right, make some balls, then flatten them and give them a round shape. That's how we make our arepas.
4- Once our arepas are formed, transfer them to a preheated skillet and let them cook on both sides until golden brown. After removing them from the skillet, you can place them in the oven for extra crispiness (this is optional).
5- While the arepas are finishing cooking, I made the scrambled eggs, or perico as we call them in my country, to accompany these delicious oatmeal arepas. I prepared these scrambled eggs by chopping onion and tomato into small cubes, sautéing them, adding salt to taste, and then adding the eggs. Mixing everything well, when the eggs are cooked through, they're ready.
6- When the arepas and scrambled eggs are ready, serve them and enjoy this super breakfast. It's nutritious and delicious, and very easy to make with just a few ingredients.
