Hey vegan lovers, today I'm going to take you through one of my go-to recipes on a recent hot day. I found this recipe on social media a while ago, and I think it's a great recipe to enjoy in this weather.

Pickled corn and cucumber is one of those spicy soup-worthy dishes that combines grilled corn and cucumber. Initially hesitant to prepare this dish, but I believe the spicy soup with savory grilled corn becomes very delicious combined with cucumber. Well below I will invite you to prepare an easy recipe!.

1 cucumber
1 piece of corn
1 teaspoon vinegar
1 tablespoon sugar
1 teaspoon salt
2 red chili peppers
3 cayenne peppers
1 liter of water

Step 1

Grill the corn until cooked using a little spread of margarine, or you can also boil it.

Step 2

Clean the cucumber skin, here I don't peel the whole skin, then cut the cucumber thinly or according to taste.

Step 3

Prepare chili, salt and sugar then grind until smooth until the spices are absorbed.

Step 4

Next, boil water in a saucepan then add the seasoning that has been kneaded, let the water boil.

After the corn is cooked, peel the corn from the cob without remaining, here make sure the corn is cooked perfectly.

Combine the cucumber pieces with the corn, stir the two until mixed and then add the vinegar.

Step 7

If the water has boiled and is not too hot, add in the corn and cucumber that has been stirred with vinegar. Now for vinegar you can replace it with lemon or lime juice, then let everything soak and store in a closed container in the refrigerator to serve cold.
